Banana splits for breakfast?

My wonderful husband introduced me to a fantastic way to eat banana spits for breakfast. When we were first married my husband asked me if I had ever eaten ice cream in my oat meal. I admitted to him that I hadn't and I also thought it sounded really nasty. But he convinced me to try it and I FELL IN LOVE!!

Basically you build a banana spit on top of your oatmeal and enjoy. We have discovered that we like more fruity stuff than chocolaty flavors.

So here is how to make it. In a bowl cook up the desired amount of oatmeal. My husband and I usually cook it in the microwave. Then place your favorite flavor of ice cream-We have enjoyed cherry(it is probably our favorite actually), strawberry and mountian blueberry (cookies and cream is okay). Surprisingly even though i am a chocolate lover i didn't really like it in this. Then top with desired fruit- We love strawberries, bananas and peaches.
Then pour yourself a big glass of milk or orange juice and enjoy some good eatens!!

My life long dream

I feel that my life long dream has now been fulfilled. I am a wife to the most wonderful and supportive husband (not to mention extremely attractive) and a mother to the most beautiful baby. You would think that I would get annoyed of doing the same thing all the time-Cleaning the house, doing laundry, cooking meals, feeding James every 2 hours, Changing poopy diapers, and repeat it all over again. But to be honest I love it! I love being a home maker and taking care of my small family. I find pure Joy in being able to feed my husband tasty meals that he loves and watching my son smile in his sleep. I look forward to the future but I will take my time enjoying the present.

Little Clippings

So a couple days after bringing James home we got had a nail clipping party. I know that this is random to blog about but i thought it was cute so here it goes. It started with me needed to clip my toe nails-i haven't been able to reach them in forever. Then i moved on to James because his nails were long from being overdue and i didn't want him to scratch himself. Then we realized that Oreo needed her nails clipped because she had been scratching the stairs and she only does that if her nails get nice and long so i decided to clip her nails too. Then Adam realized that his were getting long and needed clipping. By the end of it we were all well groomed and pretty (in Adam and James's case Handsome. It was just fun to have our little nail clipping party.

James is here

Well I wanted to keep a good record of James's birth and for those who happen to want to know how it went the is what happened.
He arrived 8 days overdue. I was totally ready for him to be here.


Well i was having some pretty intense contractions Friday night so we went into the hospital and they said that i was only dilated to a 1 and they sent us home. So the contractions continued. The only way i was able to get rest was by taking a nap and sleeping for 1-2 hours every once and a while. I was exhausted. Adam was amazingly supportive and went on walks with me, got me water and food, and blew up my exercise ball so i could sit on it. Finally on early Monday morning i started having contractions 5 min apart for 2 hours- they were being consistent so we went in again. I got checked and i was dilated to a 6 Woo Hoo we got admitted into the hospital. I was checked in about 4:30 and was dilated to a 9 at 11 but since James was facing anterior he got stuck on my cervix and wouldn't progress. We were stuck for about 3 hours. Dr. Robinson came in and said that he wanted to give me pitossin to see if that would help me progress to a 10 and if it didn't work within an hour then i would need to have a C-Section. By this point i was hurting and exhausted, i was at the end of my rope and i needed something to help with the pain. I had been doing it natural all the way up to this point. So I decided i wanted an epidural. Gery came in and started my epidural and it felt amazing. I told him that he was my favorite person that day. Thank heavens for Gary. I was so tired, I fell asleep for about an hour after getting the epi and then my nurse came in and asked if i wanted to start pushing. I said sure. Luckily the epi has relaxed my cervix to a 10 so i could push instead of having a C-Section. So we started to push and it to was about an hour of pushing before he came. Dr. Robinson said that I was a good pusher and that everything went well. James William Gedeborg was here he weighed 8lbs and 5.5oz and was 21 inches long.

The doctor even let me cut the umbilical cord even which was really cool!

The recovery room was amazing we got a family room that had a queen size bed and I loved being able to sleep with Adam and relax.


The recovery has been going fantastic and James has been eating like a champ. I Am addicted to his sweet face and can't get enough of holding him and kissing his face and playing with his cute toes. So he is here YAY!!!

41 weeks?!

Well here is an update on what is going on with Adam and I
We went to the doctor yesterday and he said that we will probably have to wait until I am 41 weeks along to even think about going into labor. We are excited for this little guy to join us but we (or i should say I) am learning patience.
We took a tour of the hospital that we are going to be delivering at and it looks wonderful. in the recovery area there is an option of having a queen bed instead of 2 hospital beds-so you can cuddle with your hubby and everything in bed SO NICE!!
Adam is working hard on storyplaygound.com and i have been making an attempt at doing advertising for the site. We will see how it turns out and we will probably ask people to check it out once it is up and running.
I have been tired, sore and hungry most if not all the time. We are so excited for James William Gedeborg to join our small family.

Life as a house wife!

So today i was doing a ton of baking, mixing, and creating. and i thought it would be fun to share. First i made this yummy banana bread that my mom would always send to my brothers while they were on their missions. We love it! and it tastes amazing! pictures are soon to come!

Banana Bread
3 medium bananas (over ripe works best)
3 Tb melted butter
1/2 C chopped nuts (opt)
1 t baking soda
1 C Sugar
3 Tb sour milk (milk with a little lemon juice or vinegar)
2 C flour
2 eggs
1 t Baking powder
1/4 t salt

mash bananas, add eggs. stir soda in sour milk add to bananas and eggs. add butter and sugar. mix in dtry ingredients. can add 1/2 c choc chips and 1/2 c butterscotch chips.
bake at 350 for 50-60 min. will make one big loaf

baking tip. i have discovered that our oven here in Nampa is too hot. This causes the bottom of cookies, breads and cakes to be burnt while the rest is normal. to fix this problem simply place a cookie sheet or another bread pan underneath. it may take slightly longer to cook but it will cook evenly and not burn your baked goods.

Now the second thing i made was ranch dressing. I hate store bought ranch because my family always made our own. It tastes amazing and I have this recipe to a few people who hate ranch and had them converted. This makes about a liter of ranch so you can half it if you want. My family would just eat it on everything so that is why we made so much of it. I generally just keep most of it and then give 1/3 to someone as a gift.

The Goddard's Ranch dressing
1 qt buttermilk
1 qt mayonaise
2 t salt
2 t parsley
2 t onion powder
1 t garlic powder
1/2 t pepper
throw it all into a bowl and mix with a whisk. and refrigerate

Tip: I generally keep the mayo containers and store the ranch dressing in there and just label it RANCH. cheap storage!

Now later today i need to bring some food to a party. So I decided that i would bring White Chicken Chili and Snicker salad.

White Chicken Chili
1 medium onion, chopped
3 boneless chicken breasts, chopped
1 Tbsp garlic powder
1 can of chicken broth (15 oz) [i use bullion cubes and it works fine]
2 cans of white means, drained [we also used pinto beans and it tastes just as good]
1 small can of diced green chilis
1 tsp oregano
1 tsp salt
1/2 tsp cumin
1/4 tsp pepper
1/8 tsp cayenne pepper [you can add more if you like it a little more spicy]
1/2 cup whipping cream
1 cup sour cream
Saute onion, garlic powder and chicken in olive oil. Add all ingredients except whipping cream and sour cream and let it simmer for 15-30 min. [we like it a little more soupy so we do less time] add whipping cream and sour cream. serve!

you can eat it with chips, cheese, or tortilla strips.

Snicker Salad
2 apples
1 6 oz container of flavored yogurt (any flavor will work but we usually use strawberry or cherry)
2 candy bars (we use twix and a snickers)
1 c whipping cream
Whip the whipping cream into soft peaks, then fold in yogurt. Chop apples and candy bars into bite size pieces and fold them into the yogurt and whipping cream until evenly coated. Keep cold until you serve it.

So there you go. There is my day today! lots of baking and cleaning, mixing and creating. let me know what you think of these recipes if you try them!

Anticipation

This Thursday Adam and i will be able to find out the gender of our baby! we are super excited. This is a picture of our baby when it was 12 weeks old. i am now 19 weeks and i just can wait.
I am also going to be getting some new maternity clothes in the mail and i can't wait to get them. they are really cute and my mom gave me a kohls gift card to do it. She is so wonderful! The appointment is at 2 pm on thursday and we will try to tell everyone we can what we are having as fast as we can but i am guessing we will use facebook to tell everyone that we don't call. i will try to also scan the ultrasound pic and put it up.

So i decided that i want to post here more often....my new favorite book

Fablehaven!!! have you heard of it. I am currently on book 4 of the 5 that are out. It is a series by Brandon Mull that is absolutely wonderful. It is a very good fantasy series that has my husband and me in its grips. I checked out the books on CD from the library and have been listening to it whenever i have time. Like in the car or i am doing stuff around the house. Adam doesn't get to listen to it all the time so i fill him in on the parts that he misses and i am sure that he will go back and reread them or something to get the full effect.

Funny thought...Oreo (our cat) likes getting her tummy rubbed. Before we left she hated it and she didn't really like being held either. now she is a puring machine every time she sees us and flops down for a tummy rub. she is just so funny. i guess she really missed us when we went to Boise, oh and she sleeps with her eyes slightly open like me...weird. oh and one day when i was craving tuna i decided to be nice and give her the tuna juice. She went crazy. now when ever we open any can of meat she goes nuts and meows at us for a good 10 min straight. funny girl.



Exciting news. I think i felt my first real kick yesterday. The baby is getting stronger and bigger. And i am getting bigger. It is so wonderful to hear from Adam that he thinks i look more beautiful now then i ever have to him before. He is just so sweet and does such a great job at taking care of me. He always asks "is mommy happy?...is baby happy?" I love him!! We will be finding out the gender in one week from today!! which is really exciting. I have a lot of guesses that it will be a girl but we shall see i guess. Adam and I both have subtle feelings about a certain gender but aren't sure if it is because we are hoping. But to be honest we would be happy with a boy or a girl. For those of you who don't know...we will be naming the baby Lillian Belle Gedeborg if it is a girl and James William Gedeborg if it is a boy.

These sound soooo Goood!

Oatmeal Almond Chocolate Chunk Cookies

heavily adapted from Almond Butter Cookies
Ingredients:

1 3/4 stick (14 tablespoons) unsalted butter
3/4 cup granulated sugar
1 cup brown sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 cup almond butter
1 1/4 cup whole wheat pastry flour
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup ground almonds
1 1/2 cups old-fashioned oatmeal (not quick cook)
8 ounces semi-sweet or dark chocolate chunks or chips
Directions:

Line baking sheet with parchment paper or silicone baking mat. Preheat oven to 350 degrees F.

Combine flour, baking soda, baking powder, and salt. Set aside. Beat butter until creamy. Add sugars beating until fluffy, approximately 3 minutes. Scrap the bowl as necessary. Beat in almond butter until incorporated. Beat in vanilla and then eggs, one at a time.

Gently stir in the dry ingredients (I switched to the paddle on my kitchen aid mixer). Add ground almonds and oatmeal and stir until just incorporated. Stir in the chocolate chunks.

Roll cookies into 2 Tbs sized balls. Place on baking sheets and bake cookies for 10-12 minutes. Edges should be slightly browned and the cookies puffed. Cool on sheets for 5 minutes before transferring to a cookie cooling rack.

Freeze any leftover cookie dough for use later. Check out my How To Freeze Cookie Dough post.

If peanut allergy is a concern: Look for an almond butter labeled "Peanut Free," i.e. Barney Butter. For the ground almonds, I recommend Blue Diamond Brand as a peanut-free option.

The Advice

When Adam and I were in Pocatello, Adam got to play the piano for The Society at ISU. It is a comedy imporv show put on by Kirby Heyborne, Corbin Allred, Lincoln Hoppe, and Kelly Lohman. After the shows were over we went to Denny's with Corbin, his mom and sister. This may sound stupid and I may be off but I always receive good advise from Corbin and I think it because he knows what is really important because he is around fame, vanity, and stuff all the time. Well anyways we were talking about my pregnancy and I was telling him about how some of the girls I knew never felt pretty while pregnant even though everyone thought they were adorable. He went on to tell me and my husband about how his wife loved being pregnant because of their attitude towards the pregnancy. to explain further he talked about how he tried his best to help his wife feel beautiful and she did feel beautiful. But I think feeling beautiful is a choice. Yes you may feel like the earth's gravity will so evolve around you instead of the sun but you are in the process of creating a miracle. Your husband may be biased but they still think you are beautiful and their opinion is the only one that truly matters. Plus if other people are saying "you look so cute" they aren't saying it just to be nice...take the compliment. You only get to experience being pregnant for a short time so cherish the moment and remember all the funny details because when your future daughter in law or daughter is telling you about being pregnant you will be able to look back on the experience and remember it with happy thoughts. That is my 2 cents along with Corbin's. So to all the pregnant ladies out there....FEEL BEAUTIFUL!
