It is called Los Betos This place has just about the best Mexican food i have ever eaten. I am kind of picky about my Mexican food to be honest and to me this place surpasses some of the more expensive restaurants that I have been to. The tortillas are amazing, and just the beans and rice are addicting. When we went Adam just a plain cheese and bean burrito and that was hands down the best burrito I have ever tasted. But I ordered the chicken chimichanga (#16) this thing was massive. It came with a side of rice and beans and had some pico de gallo on the side. It also had some guacamole and sour cream on top of it. Now this was the most amazing chimichanga I have ever had. It was cooked to a crispy perfection and then the inside chicken was moist not because there was sauce inside but the chicken itself melted in your mouth. Oh it was heaven. I am so excited to go back there and try some more. And all of this food cost around $7. Talk about good food on a budget.Gedeborg Ganghttp://www.blogger.com/profile/13768545870712449932noreply@blogger.com2tag:blogger.com,1999:blog-3889182159460030188.post-15306900521474069752012-06-18T11:10:00.001-07:002012-06-18T11:10:43.618-07:00Kristen's Father's day talk<!--[if gte mso 9]><xml>

when we teach the foundational principles in our homes or in church, let the
flame of enthusiasm for the gospel and the fire of testimony bring light,

General conference is always a good time for both hearing
and doing. We can develop a renewed vigor after hearing the inspirational talks
during conference. When we listen to what the brethren have said and choose to
act according to what we are taught we are choosing to sustain our priesthood
leaders and heavenly father.

If we are in tune with the spirit we will be able to receive
inspiration in order to know what we need to do in our personal lives in order
to improve ourselves to be more like Christ. We can also receive revelation on
how to better serve others even though sometimes what the lord asks of us is
very difficult.

I would like to share a personal experience of when I followed
the spirit’s prompting. When I was newly married and lived in Rexburg I had a
hard time making friends and feeling comfortable reaching out. I felt so alone.
I was raised with boys so it was really difficult for me to feel comfortable
around girls. One day while expressing my loneliness to heavenly father I received
the prompting to start a craft club. I pushed the thought aside for a long time
and I used excuse after excuse thinking “people wouldn’t want to come” “people don’t know me well enough to want to
come to my house”. Soon I realized I was being a bit ridiculous so I offered to
have a craft club at my house. Only a few sisters came, but I became friends
with those sisters. After a couple of meetings one sister who was very shy and
quiet came to me and told me that she was feeling very lonely and prayed that
she would find some friends in the ward. We were both in need and because I was
willing to follow the spirit both of our prayers were answered.

Most of the time heavenly father uses us to answer each
other’s prayers and if we do not listen to the spirit’s promptings then we are
in jeopardy of losing that relationship.

Our heavenly father has given us so much and we are so
blessed to have the priesthood upon the earth. I know that if we strive to love
his children and serve those who are around us. And I say this in the name of Jesus Christ Amen.
Gedeborg Ganghttp://www.blogger.com/profile/13768545870712449932noreply@blogger.com3tag:blogger.com,1999:blog-3889182159460030188.post-24040529892224525352012-06-18T09:56:00.003-07:002012-06-18T09:56:34.972-07:00Adam's Father's Day Talk
work to accomplish His will, and do what He would do in our place. This is the ultimate application of the
doctrine. This not only applies to our
calling as Fathers, but also in our other church callings, and in our callings
as Home Teachers and Visiting Teachers.

callings. This will mean that we seek to
act, and not be acted upon. We seek opportunities
to act as fathers to help teach our
children to better understand the gospel and learn from mistakes. We seek opportunities to act as home teachers and visiting teachers to serve and come to
better understand our friends that we are called to teach. We seek opportunities to act in our individual callings or responsibilities in the church
to magnify (OR SHOW THE IMPORTANCE OF) our callings. Think of a magnifying glass. You use it to more carefully study, bring
into better focus, and better view the importance of what is being studied. As we magnify our callings, we are that tool
that helps others see the importance of the area that we called to serve in, as
well as showing the importance of the Gospel itself. And as we magnify our calling as a father, we will magnify the importance

those who see your righteous example.

life. You have the responsibility to provide for and to nurture the family with

the help of God. You know that is true from experience in your own families. Lead family prayers and family time, such as
family home evenings. Give children opportunities to pray, when they can pray,
for each other in the circle who need blessings. Discern quickly the beginnings
of discord and recognize acts of unselfish service, especially to each other.

So we have been planning these burgers for quite some time now and we finally made them. I was really nervous (as I am with making all new and exciting recipes) but mostly excited. Adam and I LOVED them. we both gave them a 10 on a scale of 1-10. So delicious. "I love how when you take a bite you get one flavor and then another and then the next and then you get the first flavor again and then the third."

These burgers do have a whole lot of flavor and were very filling.
give them a try and let us know what you think
1lb ground beef
1 small onion
1/2 bell pepper
1 can chili beans
1 can red enchilada sauce (hot is what we like)
1 can of cream of mushroom soup
1 can of tomato soup
tortillas
cheese

Directions:
Brown ground beef, when the beef is most of the way cooked add chopped onions and chopped peppers. once cooked add the chili beans (don't drain) and remove from heat.
mix in separate bowl-cream of mushroom soup, tomato soup, enchilada sauce. coat the bottom of your 9X13 pan with some of the sauce so the enchiladas don't stick.
scoop some of the sauce and place in center of tortilla and spread around until about 1 in away from the edge of the tortilla. place a scoop of meat mixture on top of the sauce. then add some grated cheese. roll and place in 9X13 pan. once all the enchiladas are in the pan top with some of the enchilada sauce and sprinkle with cheese. bake at 350 for 20 min.
if you have extra sauce you can mix it into some cooked rice to have some simple Spanish rice to go with your enchiladas.
I am not sure where you can purchase vanilla beans but lately we have been getting it when we purchase the tropical pack in the bountiful baskets.
Originally my family would consume this delicious concoction on top of brownies and ice cream. My dad, when i was a baby, would dip my pacifier in hot fudge and give it to me to get me to stop my crying. I am truly a chocoholic because of my dad. THANK YOU!

Home Made Hot Fudge

1 can of evaporated milk
1 cup sugar
1 12 oz pkg of choc chips
bring ingredients to a boil. boil for 1 min then remove from heat
add:
1 tsp vanilla
1 Tbsp butter

Now when you want to get adventurous you can exchange the choc. chips for other type of chips. for example in the picture above the left jar if full of mint chocolate fudge and the right is peanut butter and chocolate fudge. my mom has also made white chocolate and said it was really yummy. i also substituted the vanilla with almond extract and it was really yummy too.
here are some fun pictures we took.
So recently i put the two together. I made some Salmon and a Mediterranean salad. The salad wasn't as good as i would have hoped but the salmon was SO delicious. It is made with a citrus salad which is an unexpected and delightful addition to the fish dish. On a scale of one to ten Adam gave the dish a 7 i would say i would give it a 8 or 9. Adam is less of a fish lover so it made sense but he liked it so i guess that is saying something.

So here are the cookies we made. These cookies have become a new favorite of mine and if I make them then I can stop eating them. The first time I made them I think I ate ten in one day. So be warned they are addicting.
When we were first married my husband asked me if I had ever eaten ice cream in my oat meal. I admitted to him that I hadn't and I also thought it sounded really nasty. But he convinced me to try it and I FELL IN LOVE!!

Basically you build a banana spit on top of your oatmeal and enjoy. We have discovered that we like more fruity stuff than chocolaty flavors.

So here is how to make it. In a bowl cook up the desired amount of oatmeal. My husband and I usually cook it in the microwave. Then place your favorite flavor of ice cream-We have enjoyed cherry(it is probably our favorite actually), strawberry and mountian blueberry (cookies and cream is okay). Surprisingly even though i am a chocolate lover i didn't really like it in this. Then top with desired fruit- We love strawberries, bananas and peaches.
Then pour yourself a big glass of milk or orange juice and enjoy some good eatens!!Gedeborg Ganghttp://www.blogger.com/profile/13768545870712449932noreply@blogger.com1tag:blogger.com,1999:blog-3889182159460030188.post-61876791896535189392011-08-08T17:22:00.000-07:002011-08-08T17:22:34.059-07:00My life long dreamI feel that my life long dream has now been fulfilled. I am a wife to the most wonderful and supportive husband (not to mention extremely attractive) and a mother to the most beautiful baby. You would think that I would get annoyed of doing the same thing all the time-Cleaning the house, doing laundry, cooking meals, feeding James every 2 hours, Changing poopy diapers, and repeat it all over again. But to be honest I love it! I love being a home maker and taking care of my small family. I find pure Joy in being able to feed my husband tasty meals that he loves and watching my son smile in his sleep. I look forward to the future but I will take my time enjoying the present. I know that this is random to blog about but i thought it was cute so here it goes. It started with me needed to clip my toe nails-i haven't been able to reach them in forever. Then i moved on to James because his nails were long from being overdue and i didn't want him to scratch himself. Then we realized that Oreo needed her nails clipped because she had been scratching the stairs and she only does that if her nails get nice and long so i decided to clip her nails too. Then Adam realized that his were getting long and needed clipping. By the end of it we were all well groomed and pretty (in Adam and James's case Handsome. It was just fun to have our little nail clipping party.
He arrived 8 days overdue. I was totally ready for him to be here.

Well i was having some pretty intense contractions Friday night so we went into the hospital and they said that i was only dilated to a 1 and they sent us home. So the contractions continued. The only way i was able to get rest was by taking a nap and sleeping for 1-2 hours every once and a while. I was exhausted. Adam was amazingly supportive and went on walks with me, got me water and food, and blew up my exercise ball so i could sit on it. Finally on early Monday morning i started having contractions 5 min apart for 2 hours- they were being consistent so we went in again. I got checked and i was dilated to a 6 Woo Hoo we got admitted into the hospital. I was checked in about 4:30 and was dilated to a 9 at 11 but since James was facing anterior he got stuck on my cervix and wouldn't progress. We were stuck for about 3 hours. Dr. Robinson came in and said that he wanted to give me pitossin to see if that would help me progress to a 10 and if it didn't work within an hour then i would need to have a C-Section. By this point i was hurting and exhausted, i was at the end of my rope and i needed something to help with the pain. I had been doing it natural all the way up to this point. So I decided i wanted an epidural. Gery came in and started my epidural and it felt amazing. I told him that he was my favorite person that day. Thank heavens for Gary. I was so tired, I fell asleep for about an hour after getting the epi and then my nurse came in and asked if i wanted to start pushing. I said sure. Luckily the epi has relaxed my cervix to a 10 so i could push instead of having a C-Section. So we started to push and it to was about an hour of pushing before he came. Dr. Robinson said that I was a good pusher and that everything went well. James William Gedeborg was here he weighed 8lbs and 5.5oz and was 21 inches long.

The doctor even let me cut the umbilical cord even which was really cool!

The recovery room was amazing we got a family room that had a queen size bed and I loved being able to sleep with Adam and relax.

The recovery has been going fantastic and James has been eating like a champ. I Am addicted to his sweet face and can't get enough of holding him and kissing his face and playing with his cute toes. So he is here YAY!!!

Gedeborg Ganghttp://www.blogger.com/profile/13768545870712449932noreply@blogger.com2tag:blogger.com,1999:blog-3889182159460030188.post-78465907913864152962011-07-14T19:33:00.000-07:002011-07-14T19:33:29.076-07:0041 weeks?!Well here is an update on what is going on with Adam and I
We went to the doctor yesterday and he said that we will probably have to wait until I am 41 weeks along to even think about going into labor. We are excited for this little guy to join us but we (or i should say I) am learning patience.
We took a tour of the hospital that we are going to be delivering at and it looks wonderful. in the recovery area there is an option of having a queen bed instead of 2 hospital beds-so you can cuddle with your hubby and everything in bed SO NICE!!
Adam is working hard on storyplaygound.com and i have been making an attempt at doing advertising for the site. We will see how it turns out and we will probably ask people to check it out once it is up and running.
I have been tired, sore and hungry most if not all the time. We are so excited for James William Gedeborg to join our small family.
well i think that is it for now! love you all.Gedeborg Ganghttp://www.blogger.com/profile/13768545870712449932noreply@blogger.com0tag:blogger.com,1999:blog-3889182159460030188.post-25252647415238713332011-05-13T12:06:00.000-07:002011-05-13T12:06:02.837-07:00Life as a house wife!So today i was doing a ton of baking, mixing, and creating. and i thought it would be fun to share. This causes the bottom of cookies, breads and cakes to be burnt while the rest is normal. to fix this problem simply place a cookie sheet or another bread pan underneath. it may take slightly longer to cook but it will cook evenly and not burn your baked goods.

Now the second thing i made was ranch dressing. I hate store bought ranch because my family always made our own. It tastes amazing and I have this recipe to a few people who hate ranch and had them converted. This makes about a liter of ranch so you can half it if you want. My family would just eat it on everything so that is why we made so much of it. I generally just keep most of it and then give 1/3 to someone as a gift.

The Goddard's Ranch dressing
1 qt buttermilk
1 qt mayonaise
2 t salt
2 t parsley
2 t onion powder
1 t garlic powder
1/2 t pepper
throw it all into a bowl and mix with a whisk. and refrigerate

Tip: I generally keep the mayo containers and store the ranch dressing in there and just label it RANCH. cheap storage!

Now later today i need to bring some food to a party. So I decided that i would bring White Chicken Chili and Snicker salad.

White Chicken Chili
1 medium onion, chopped
3 boneless chicken breasts, chopped
1 Tbsp garlic powder
1 can of chicken broth (15 oz) [i use bullion cubes and it works fine]
2 cans of white means, drained [we also used pinto beans and it tastes just as good]
1 small can of diced green chilis
1 tsp oregano
1 tsp salt
1/2 tsp cumin
1/4 tsp pepper
1/8 tsp cayenne pepper [you can add more if you like it a little more spicy]
1/2 cup whipping cream
1 cup sour cream
Saute onion, garlic powder and chicken in olive oil. Add all ingredients except whipping cream and sour cream and let it simmer for 15-30 min. [we like it a little more soupy so we do less time] add whipping cream and sour cream. serve!

you can eat it with chips, cheese, or tortilla strips.

Snicker Salad
2 apples
1 6 oz container of flavored yogurt (any flavor will work but we usually use strawberry or cherry)
2 candy bars (we use twix and a snickers)
1 c whipping cream
Whip the whipping cream into soft peaks, then fold in yogurt. Chop apples and candy bars into bite size pieces and fold them into the yogurt and whipping cream until evenly coated. Keep cold until you serve it.

I am currently on book 4 of the 5 that are out. It is a series by Brandon Mull that is absolutely wonderful. It is a very good fantasy series that has my husband and me in its grips. I checked out the books on CD from the library and have been listening to it whenever i have time. Like in the car or i am doing stuff around the house. Adam doesn't get to listen to it all the time so i fill him in on the parts that he misses and i am sure that he will go back and reread them or something to get the full effect.
Funny thought...Oreo (our cat) likes getting her tummy rubbed. Before we left she hated it and she didn't really like being held either. now she is a puring machine every time she sees us and flops down for a tummy rub. she is just so funny. i guess she really missed us when we went to Boise, oh and she sleeps with her eyes slightly open like me...weird. oh and one day when i was craving tuna i decided to be nice and give her the tuna juice. She went crazy. now when ever we open any can of meat she goes nuts and meows at us for a good 10 min straight. funny girl.

Exciting news. I think i felt my first real kick yesterday. The baby is getting stronger and bigger. And i am getting bigger. It is so wonderful to hear from Adam that he thinks i look more beautiful now then i ever have to him before. He is just so sweet and does such a great job at taking care of me. He always asks "is mommy happy?...is baby happy?" I love him!! We will be finding out the gender in one week from today!! which is really exciting. I have a lot of guesses that it will be a girl but we shall see i guess. Adam and I both have subtle feelings about a certain gender but aren't sure if it is because we are hoping. But to be honest we would be happy with a boy or a girl. For those of you who don't know...we will be naming the baby Lillian Belle Gedeborg if it is a girl and James William Gedeborg if it is a boy.

until next time. love you all!!
oh i will be taking more pics later but this is my belly (and me) when i was about 15 weeks. i am now 18.

heavily adapted from Almond Butter Cookies
Ingredients:

1 3/4 stick (14 tablespoons) unsalted butter
3/4 cup granulated sugar
1 cup brown sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 cup almond butter
1 1/4 cup whole wheat pastry flour
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup ground almonds
1 1/2 cups old-fashioned oatmeal (not quick cook)
8 ounces semi-sweet or dark chocolate chunks or chips
Directions:

Line baking sheet with parchment paper or silicone baking mat. Preheat oven to 350 degrees F.

Combine flour, baking soda, baking powder, and salt. Set aside. Beat butter until creamy. Add sugars beating until fluffy, approximately 3 minutes. Scrap the bowl as necessary. Beat in almond butter until incorporated. Beat in vanilla and then eggs, one at a time.

Gently stir in the dry ingredients (I switched to the paddle on my kitchen aid mixer). Add ground almonds and oatmeal and stir until just incorporated. Stir in the chocolate chunks.

Roll cookies into 2 Tbs sized balls. Place on baking sheets and bake cookies for 10-12 minutes. Edges should be slightly browned and the cookies puffed. Cool on sheets for 5 minutes before transferring to a cookie cooling rack.

Freeze any leftover cookie dough for use later. Check out my How To Freeze Cookie Dough post.

If peanut allergy is a concern: Look for an almond butter labeled "Peanut Free," i.e. Barney Butter. For the ground almonds, I recommend Blue Diamond Brand as a peanut-free option.Gedeborg Ganghttp://www.blogger.com/profile/13768545870712449932noreply@blogger.com0tag:blogger.com,1999:blog-3889182159460030188.post-26877271971114890332011-02-05T10:47:00.000-08:002011-02-05T10:47:26.533-08:00The AdviceWhen Adam and I were in Pocatello, Adam got to play the piano for The Society at ISU. It is a comedy imporv show put on by Kirby Heyborne, Corbin Allred, Lincoln Hoppe, and Kelly Lohman. After the shows were over we went to Denny's with Corbin, his mom and sister. This may sound stupid and I may be off but I always receive good advise from Corbin and I think it because he knows what is really important because he is around fame, vanity, and stuff all the time. Well anyways we were talking about my pregnancy and I was telling him about how some of the girls I knew never felt pretty while pregnant even though everyone thought they were adorable. He went on to tell me and my husband about how his wife loved being pregnant because of their attitude towards the pregnancy. to explain further he talked about how he tried his best to help his wife feel beautiful and she did feel beautiful. But I think feeling beautiful is a choice. Yes you may feel like the earth's gravity will so evolve around you instead of the sun but you are in the process of creating a miracle. Your husband may be biased but they still think you are beautiful and their opinion is the only one that truly matters. Plus if other people are saying "you look so cute" they aren't saying it just to be nice...take the compliment. You only get to experience being pregnant for a short time so cherish the moment and remember all the funny details because when your future daughter in law or daughter is telling you about being pregnant you will be able to look back on the experience and remember it with happy thoughts. That is my 2 cents along with Corbin's. So to all the pregnant ladies out there....FEEL BEAUTIFUL!Gedeborg Ganghttp://www.blogger.com/profile/13768545870712449932noreply@blogger.com1tag:blogger.com,1999:blog-3889182159460030188.post-53958026351813189822010-09-02T08:36:00.001-07:002010-09-02T08:36:18.201-07:00Romano's macaroni gill's rosmary breadI got bored this afternoon and decided to make some rosemary bread. i don't know if any of you have been to the macaroni grill before but they serve this divine rosemary bread when you get there so i am making an attempt of recreating it. we will see how it turns out. right now it is rising on the stove. and after about an hour i will put it in the oven. yay! here is the recipe in case you are interested.
We had a small celebration with just us before we left but we also are celebrating tonight with his parents in Salt Lake City. We are staying with mom and dad Gedeborg at their new appartment, they will be staying there for their mission and I am pretty sure they will be starting their mission on Friday. YAY!! Sooo this week we left on Saturday morning and went to Manti for Emma's baby blessing. (for Bob and Amanda's newest baby). that night we had a hot dog cook out and slept in tents outside. It was really funny that night when we woke up to a symphony of cat meows and that morning to the rooster's crow. We woke up Sunday morning and got ready for church. I was really grateful that i got to get Emma ready for church. I got to give her a bath (first baby bath for me), and get her dressed in her beautiful little white dress. When Amanda was telling me what to do for the bath she wasn't kidding that she would get slippery. haha. After church we went to a park in Manti and ate. there was a wide variety of food and lots of little kids running around and having fun. After the Lunchin we decided to go to Becky and Jim Bob's for the night and we at a big bowl of chili for dinner and went to bed in their tree house. Now this is no ordinary tree house. it is 3 stories tall and the top layer even has screen windows, a loft, and a skylight. BEAUTIFUL! every little kids dream complete with christmas lights wrapped around the trunk and a 2 person swing. In the morning we woke up, it was Adam's birthday, YAY!! We ate micky mouse waffles that were SOOO good and had cranberry apple juice. there was even huckleberry syrup. After a very filling breakfast we headed out for SALT LAKE CITY!! woo hoo. Oh did i mention that we are rereading the Harry Potter series on all of our road trips. Yes there has been that many. We are on the 4th book already. Anyways, we helped mom and dad Gedeborg move into their new appartment they will be staying in for their mission. We went to the store for a few things and then ate dinner at Jenny's brother's house (She is my new sister-in-law). It was a full day. When we got back we set up our bed and crashed for the night. Today we have done a ton! We woke up and went to the Welfare Square in town and did a tour. I recomend it to everyone. It was amazing to learn about how the chruch functions and helps everyone and the saints to live comfortable lives. This truly is an amazing church. We also went to costco and Adam and I went with my family to visit my Great Great Aunt Caroline. She lives right across the street from temple square and we visit her as often as we can when we come to salt lake. She is such an incredible woman. So independant and so many stories. Now we are at the Family History library doing some research on family names. Adam and his dad are trying to find some names on their side that have been difficult to find sometimes. Tonight we are going to go out to dinner to celebrate Adam's birthday. (if you celebrate it late it is called a bogey birthday-according to Becky) Then we are going to a concert at a park on temple square. WHAT FUN!!! Tomorrow we will be going to Chase and Jenny's wedding at the Salt Lake Temple. I am so excited for them they are such a good match for eachother. Chase is my brother. Afterwards we will be going to a lunchin at a chruch nearby and then heading back to our little quiet home in rexburg Idaho. Oh and the best thing about the trip home is that we will be picking up a baby kitten on the way home. Her name is Oreo! She will be our first cat EVER so if you have any tips let us know. We will be getting her fixed so we don't have to worry about kittens. Anyways. That is our fun and exciting trip so far. I will post pictures as soon as we get home and can do that.Gedeborg Ganghttp://www.blogger.com/profile/13768545870712449932noreply@blogger.com1
