Goddard Enchiladas

Enchiladas
1lb ground beef
1 small onion
1/2 bell pepper
1 can chili beans
1 can red enchilada sauce (hot is what we like)
1 can of cream of mushroom soup
1 can of tomato soup
tortillas
cheese

Directions:
Brown ground beef, when the beef is most of the way cooked add chopped onions and chopped peppers. once cooked add the chili beans (don't drain) and remove from heat.
mix in separate bowl-cream of mushroom soup, tomato soup, enchilada sauce. coat the bottom of your 9X13 pan with some of the sauce so the enchiladas don't stick.
scoop some of the sauce and place in center of tortilla and spread around until about 1 in away from the edge of the tortilla. place a scoop of meat mixture on top of the sauce. then add some grated cheese. roll and place in 9X13 pan. once all the enchiladas are in the pan top with some of the enchilada sauce and sprinkle with cheese. bake at 350 for 20 min.
if you have extra sauce you can mix it into some cooked rice to have some simple Spanish rice to go with your enchiladas.
